There’s not much worse than just being too busy (or tired) to plan and cook a complicated meal. That’s why I love simple meals!

Now that summer is here we are not only busy but we are just plain HOT!  It’s difficult to motivate yourself to cook a meal in 90` temps!

Many times in the summer I turn to alternative ways of cooking without heating my house up even more.  Sometimes I use a crockpot, the microwave, or the grill.

I have put together a list of 5 simple meals for those busy weeknights when you just don’t feel like spending the evening in the kitchen!

Sauteed or Grilled Chicken

Seasoned Green Beans

Baked Potatoes

Grilled Hamburger Steaks

Grilled or Sauteed Onions, Bell Peppers, and Mushrooms

Mashed Potatoes


Meal 3

Chicken or Beef Crunchy Tacos

Sauteed Red Bell Peppers, Onions, and Zucchini

Seasoned Jasmine Rice


Meal 4

BBQ Boneless Pork Chops

Corn on the Cob

Homemade French Fries


Meal 5

Spaghetti with Meat Sauce

Romaine Salad tossed with Balsamic Vinegar and Olive Oil

Toasted Garlic Bread (Gluten Free if you prefer)


There you have 5 simple meals that only require pantry staples and ingredients you have on hand. You can season your meat and vegetable to your liking.  Don’t get fancy!  Just simple salt, pepper, garlic, and onion can go a long way!
