My son and I recently began eliminating gluten from our diets and it was then that I realized how much we really loved Chick-fil-A chicken nuggets!

I decided to scour the blogosphere and find a Gluten Free recipe that we could replicate at home.  Each recipe had it’s own version of seasoning but I noticed that they all had one ingredient in common.  It never failed to include one secret ingredient!

It blew my mind when I realized pickle juice was the key!

I have made these nuggets with the various spices and then I have made them more simply, but I never leave out the pickle juice!  No matter what else I put in the mix this is the one ingredient you can not replace.

I have decided that we prefer these nuggets on the simpler side. I don’t go crazy on the seasoning like some recipes call for.  I feel like they are just as good with old fashioned salt and pepper.  Like I said, it’s the pickle juice that is the real star!

I always knew Chick-fil-A had a special flavor to their chicken, I just couldn’t put my finger on what it was.  I’m so happy someone else figured it out because it is spot on!

I have made these both with traditional all purpose flour and I have made them with all purpose gluten free flour.  We have found that the gluten free flour actually gives these more of a crunch!

These nuggets are so good and so close to the real thing, I promise they will satisfy that craving!

  • 3/4 cups Pickle Juice
  • 3/4 cups Milk
  • 1 whole Egg
  • 1 pound Thin Chicken Breasts Cut Into Chunks
  • 1 cup Flour
  • 2 tablespoons Powdered Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Paprika

  • In a plastic container, whisk together pickle juice, milk, egg and salt. Add in the chunks of chicken breast and let them marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  • Once chicken is done marinating, combine all of the ingredients for the breading in a large Ziplock bag. Add chicken chunks to the flour bag and shake until all of the chunks are coated.
  • Add oil to electric skillet set to 375. Let oil come to temperature. Drop chicken chunks into the hot oil and fry for about 2 minutes per side. Remove chicken to a plate covered with a paper towel to drain off the grease. Repeat this process until all the chunks have been cooked.
